Happy First Day Of Fall!

Happy first day of fall, loves! We are excited for a fresh new season over at our house. We are welcoming fall with open arms + we could hardly wait to decorate, haha. It was a family project last week (we are always most excited to decorate our front porch & it makes me so happy how excited the kids get about it- I remember being the same way when my mama decorated.) Utah has some of the most beautiful fall seasons and our leaves are already changing + falling. We have been out daily just soaking up the beautiful weather & views… definitely thankful to live in a place where we get all seasons!
We are currently working on our fall bucket list (I will share it here soon, too in case ya’ll want some ideas). I love all the fall activities, clothes, decor, yummy foods, etc.(and I especially love how fall just brings people together) One of my favorite fall desserts is my mom’s pumpkin crunch dessert so I thought I would share it with you all here! It’s so easy to make & absolutely delicious. Tag me if you try it! XOXO
Pumpkin Crunch Dessert
1 (15 oz) can pumpkin (not pumpkin filling)
1 (12 oz) can evaporated milk
3 large eggs
1 cup sugar
1/4 tsp salt
4 tsp pumpkin pie spice
1 box yellow cake mix
6 ounces melted butter (3/4 cup) (regular salted)
1 c. chopped pecans
Vanilla ice cream (optional)
Preheat oven to 350 degrees. Spray 9×13 metal pan or glass dish with cooking spray. If using a glass dish, preheat to 325 degrees F.
Combine pumpkin, evaporated milk, eggs, sugar, salt and pumpkin pie spice in a large bowl. Pour into pan. Sprinkle cake mix evenly over the top. Pour butter over the cake mix, then sprinkle pecans all over the top.
Bake for 50 minutes or until golden brown. Let cool completely then cut into squares and serve with a scoop of ice cream.
Makes enough for 10 people. Enjoy!
