3 Easy Postpartum Meal Options

 

After having a sweet new baby, it’s pretty much vital to have easy meals that are either already prepared or very easily prepared. Easy recipes are amazing at any stage to be honest, but especially postpartum so that you or your spouse can make them with little to no prep time.  I am sharing a few of my go-to’s after having my babies that I think you will love. All 3 of these recipes only take a few minutes and can be made on the stove or crock pot and are Thompsy family favorites.

 

Pro-tip: These make perfect recipes to deliver to families with new arrivals as well!

 

Cheesy Wild Rice Soup

Ingredients:

2 C Uncle Ben’s Wild Rice (prepared as directed on package)

1 Medium Onion, finely diced

1 lb of bacon, cooked and crumbled

2 C milk

1 C heavy cream

2 cans cream of potato soup

1 lb Velveeta, cubed

 

Directions:

Mix all ingredients in a crockpot and simmer until cheese is melted.(About 30 min on high in crock pot or low in crock pot 2-3 hours)

 

Taco Soup

Ingredients:

1.5 lb Ground Beef

16 oz can stewed tomatoes

1 can corn

1 can 8oz tomato sauce

1 large can Kidney beans drained

1 taco seasoning

 

Directions:

Cook ground beef until cooked through, drain oil, then throw in a crockpot on high until ready to eat.

 

 

Sopa

Ingredients:

1 small bag of noodles (7 oz)

Small can of tomato sauce

Small onion

Minced garlic

6 Knorr chicken bouillon

Shredded cheese

 

Directions:

Add diced onion and oil to bottom of pan and sauté

Add noodles and brown with onion, keep mixing

Add tomato sauce

Add enough water to cover noodles

Add chicken bouillon

Cover and cook for 20 minutes until noodles are soft

Sprinkle with cheese

 

I hope you find these recipes simple and not too time-consuming. Now you’ll have more time for all the baby snuggles! Also, feel free to customize these recipes to your liking.  Sometimes we add cotija cheese, green onions, etc. Bonus, they are so easy to make in bulk for leftovers or saved in the freezer for another time.
