My Go-To Chili Recipe

Whether you’re making a quick and easy dinner for your family at home or headed to a fall gathering, this chili recipe is a must-make in our household.  I love a little spice at dinner time (and so does Sid) and so we’re both big fans of chili nights.  Make this one for your family and also let me know what you think!

Thompson Family Go-To Favorite Chili Recipe

Serves 4 (Double recipe for 8)

Ingredients:

  • ¾ lb lean ground beef
  • 1 cup chopped onion
  • ½ cup chopped green bell pepper
  • 2 cloves garlic, minced
  • 1 16 ounce can dark red kidney beans (drained)
  • 1 16 ounce can diced tomatoes
  • 1 8 ounce can tomato sauce
  • 2-3 tsp chili powder (add to taste)
  • ½ tsp dried basil, crushed
  • ¼ tsp salt
  • ¼ tsp pepper

How To Make:

  1. In a large pan, cook ground beef, chopped onion, green peppers, and garlic until meat is browned.  Then drain fat.
  2. Add meat and veggie mixture to a large pot or crockpot (if you’d rather have it slow cook).
  3. Stir in undrained diced tomatoes, drained beans, tomato sauce, chili powder, basil, and then salt and pepper.
  4. If you’re cooking over the stove top, bring to a boil and then reduce heat, cover, and simmer for 20 minutes.
  5. If you’re cooking in a slow cooker, cover and then set to low to simmer for 3-4 hours.
